Im looking for a 4.80x4.00x8 tire/wheel combo with 3/4inch hole for shaft. Single castle nut holds wheel bearing in place.

For your log splitter wheel and tire combination, the pilot hole in the center will be much larger than the hub center. This is not an issue as the wheel will bolt to the hub and be centered based on the lug studs and lug nuts. All trailer spindles will have the single nut holding that wheel bearing in place as you stated. If you have no lugs and only the single center nut then I don't have any wheel options available for that hub centered assembly.
My recommendation is the Kenda 4.80/4.00-8 Bias Trailer Tire with 8" White Wheel # AM30040 if you have 4 lug hubs or # AM30060 if you have 5 lug hubs. These wheels are powder coated for weather protection and have a 2 year warranty on the tire with a 1 year warranty on the wheel. With either of these options you will inflate your tires to 90 psi cold.
This will give you a great tire and wheel for your needs. I've attached some videos to further assist.
