Can a boat trailer with P215/70R 14 tires be replaced with a ST205/75R 14 tire? What is the difference? I cannot seem to fine the original 215 tires.

Your boat trailer tires should be replaced as the P in front of the number stands for "passenger" meaning they are not intended for trailer use but rather to be used on a car. The ST on the tires you see from us are "special trailer" tires intended for use on trailers only. I've attached an article to assist.
For your 14 inch wheels, I recommend the Taskmaster ST205/75R14 Radial Trailer Tire - Load Range C # TR20514 which is rated for 1,760 lbs at 50 psi and max speeds of 81 mph. This tire has a width of 8 inches and an outer diameter of 26.14 inches. This tire will be slightly thinner in overall width and slightly taller than your P215/70R14 tires which are 8.5 inches wide and 25.9 inches in diameter.
Your other option is the Provider ST215/75R14 Radial Trailer Tire - Load Range C # TTWTR21514 which will have the same width as your current ties but be taller at 26.7 inches diameter. These are also great tires rated for 81 mph max and loads up to 1,870 at 50 psi.
The two things you want to consider when replacing a tire of a different size are 1) clearance from your frame on the inside, and 2) the amount of height needed from the top of the tires to the fender or trailer floor. The suspension travel will need approximately 4 inches of vertical clearance for deflection.
