For the 2000, the Tahoe was a split model year. The Tahoe Limited and Z71 were produced on the GMT400 platform, which was the frame used by the previous model year. Since your Tahoe is the 'new body style' produced on the newer GMT800 platform the Curt Class IV hitch you mentioned, part # 14080 would be a fit for your vehicle.
As you can see in the instructions I've linked, the hitch is an easy install, utilizing existing holes in the truck frame so no drilling is needed. You might also need the following to complete your towing set-up:
Ball mount, part # 40331
2 inch trailer ball, part # A-90
2-5/16 trailer ball, part # 19286
If you don't already have a 7-way trailer connector, you can install one using # HM40975. If you click the provided link, you can see the connector being installed on a 2001 Tahoe.
