What is the recommended pilot diameter for the mating rim to fit this hub? it appears the hub measures 2.47-2.5.

Hey Tim!
Hubs like the Easy Grease Trailer Idler Hub Assembly # AKIHUB-545-2-LFEZ-1K don't have a listed pilot hole diameter they fit with, but basically anything bigger than 2.5" will fit with this. Any 13" to 15" wheel will have a large enough pilot diameter. For example, the Loadstar ST175/80D13 Bias Trailer Tire with 13" Galvanized Wheel # AM3S130 has a 2.65" pilot hole diameter and will fit perfectly with this hub.
Do you have a smaller pilot hub and you're trying to see if this will work with it?
