No, one that I can find makes a custom fit hitch for a 2012 Mercedes-Benz Sprinter with a 30 3/8" wide frame. Like you said they're not very common and most of the ones you see are commercial vehicles that have been equipped by aftermarket upfitter companies that commonly add utility, service bodies, or steps.
I have a couple options for universal hitches depending on how much of a drop you have from your frame to the bottom of your bumper. The drop is the vertical measurement from the underside of the vehicle frame member and the lowest point of the bumper. If this distance is less than 3", a universal weld-on hitch like item # 15901 would be a great choice. If you need more of a drop than that, you'll want the Draw-Tite item # 41990-07, which offers a 7" drop.
