Is there a set a trailer brakes that are made like vehicle brakes? Where the drums can come off, without removing the bearings?

Hey David, thanks for reaching out. There are two common kinds of brakes for trailers. Drum brakes can be either hydraulic or electric, or it would be a hydraulic disc brake setup. The hydraulic disc brakes would be the most similar to what you see on most vehicles.
There are some kits that come with slip-on rotors like part # DE42FR, and the rotors could be removed without removing the idles hub and bearings.
For trailer drum brakes, all of the drums will be one piece like part # AKHD-865-7-2-EZ-K.
