I own a 2016 Thor Gemini on a the Ford Transit 350HD chasis. It has dual wheels on the rear. Will the roadmaster spare tire carrier RM- 195125 work with a dually mount tire?

The Roadmaster Spare Tire Mount # RM-195125 only handles standard wheels, so since you have dual wheels on your Thor Gemini you need the Spare Tire Carrier # RM-195225 instead.
