Hey Octane,
I love to help people figure out what all is needed to get their flat tow setup in working order, but when it comes to choosing the right vehicle, we unfortunately don't have a master list of what can and can't be flat towed - the closest thing I have to that are our help articles on parts needed to tow the most popular flat-tow vehicles (see attached link).
The best advice I can give for finding a flat tow vehicle is to choose a vehicle that you genuinely like. Odds are you'll be driving this vehicle more than just on RV trips so getting a vehicle inside your price-point and that you'll enjoy owning are the most important things.
If you fall in love with a vehicle that can't be flat towed, you can always purchase a trailer to tow it on. The trailer can be used for a wide variety of things outside of towing your vehicle, is more future-proof than flat towing equipment (you can load different vehicles on it over the years), and you also won't be adding wear and tear to the rear wheels on your towed vehicle.
