Other than the round vs. square frame, is there any significant difference between the Curt Class III Round Tube Receiver hitch Code 13591 and the Hidden Hitch Class III Receiver Hitch Code 87572. I will be towing a jet ski, weight about 1,000lbs including trailer.

The biggest difference between the discontinued Hidden Hitch part # 87572, and the Curt Hitch part # 13591 that you referenced is the round tube vs. square tube. Another difference is that the Draw-Tite hitch uses a couple more attachment points. Either would work great for you. If it was me, I would probably go with the Draw-Tite based on the price difference.
To complete your towing setup you may also be interested in the Curt Trailer Wiring Harness part # 56094. Installation vid and instructions attached as well.
For a ball mount, hitch ball, and pin and clip, I would recommend the etrailer Ball Mount Kit, part # 989900. This is a kit which includes 2 ball mounts, a 1-7/8 inch ball, 2 inch ball, and a hitch pin and clip.
