Does installing this hitch void my VW warranty? I will just be using the hitch to install a bike rack. I have a VW 2019 Golf Alltrack

Installing the EcoHitch Hidden Trailer Hitch Receiver # 306-X7315 on your 2019 VW Golf Alltrack will not void your vehicle warranty. The only way it could void your warranty is if you used the receiver to tow more weight than your VW is rated for.
Also the 4-Way Wiring # C59236 will not void your warranty either. This is the common connector found on small trailers you might pull and can also be used for Auxiliary Lights # C53201 for hitch mounted accessories.
