Still waiting on an answer about converting a 4 pin to 7 pin trailer hookup for an RV—2003 Econoline E350. I also need the brake controller. Would like to know what will fit.

It looks like you are on the right track here, because the Universal Installation Kit # ETBC7 is exactly what you will need to convert the 4-pin on your 2003 Ford E350 to a 7-pin. This kit will come with everything you need, included the necessary wires for installing a brake controller.
For a brake controller I recommend the Tekonsha Prodigy P3 # 90195. I like this controller because it has large, accessible buttons and an LCD display which make operation simple. I have included a few install videos for you below.
