Will this 2inch receiver hitch work on a 2017 Prius Eco?

Yes, it will. I checked with EcoHitch and I can confirm that their Hidden Trailer Hitch item # EH53VR will work with the Eco model 2017 Prius. I have linked an installation video below so you can see how to get this hitch set up.
If you are planning on towing you will also need a wiring harness item # C56353 and a ball mount kit item # C45534.
I also recommend using the No-Drill Mount Bracket item # 18136 and the item # C42CR to secure the 4-way connector to your hitch. This will put it in an easy to reach spot and prevent the risk of it falling onto the road.
