Welcome back! Happy to hear you're enjoying your purchase. To control a trailer with brakes you need a 7-way connector. To get to a 7-way on your 2016 Subaru Outback you're going to need two separate wiring harnesses.
The first harness you'll need is the Curt T-Connector item # C56040. This custom fit connector plugs into your Subaru's wiring harness, which is located behind the interior trim panel in your rear cargo area. It will provide you with a 4-way connector.
The second harness you will need is the Universal Installation Kit for Trailer Brake Controller item # ETBC7. The kit includes a pre-wired 7- and 4-way trailer connector that mounts easily at the rear of your Subaru with an included bracket. This kit is designed for use on a vehicle with an existing 4-way flat trailer connector and plugs directly into it. You'll then need to run a power wire and brake controller wire.
I have attached installation videos below for both parts.
To control your pop up camper's brakes you will also need a brake controller, I highly recommend the Redarc Tow-Pro Liberty Brake Controller item # RED24FR. This is a proportional brake controller that activates your trailer's brakes when your Subaru decelerates.
The reason the Tow-Pro Liberty is the best option is because of its unique installation method where the only visible portion is the control knob that's about the size of a nickel. The main unit is hidden away inside your dash to be completely out of the way and out of sight.
To complete your installation you will need the Universal Wiring Harness for Redarc Tow-Pro Trailer Brake Controllers item # RED69FR. I have also attached an installation video for this controller below. It will help you get the Redarc installed and set up.
To round out your towing setup you will need the Curt Towing Starter Kit for 2" Hitches item # C45534. This towing kit will provide you with a 2" ball and a fixed ball mount with a 3/4" rise and 2" drop. It also includes a hitch pin and clip, hitch receiver lock with keys, hitch cover, and a storage case.
