Why does this come with zinc hardware instead of stainless? Zinc/galvanized steel will interact with Stainless Steel and cause galvanic corrosion.

Honestly I don't have a good answer for that but it seems that as long as you won't be in saltwater you'll be fine. Galvanized steel and stainless steel normally won't become problematic together but if there's salt water you will see some corrosion develop. We haven't had any people come back and say the nut and washer created problems with the shank and ball of the # SC23-C either.
