Question:

I am in need of a light weight easy off and easy on single bike platform 2” hitch mount bike rack. The ebike is 50 lbs with fenders. Price is not a major factor if a quality rack.

As long as the fenders on your e-bike are shorter the Saris MHS Bike Rack for 1 Bike # SAR23MR that you referenced would be your best option for a single bike rack. The wheel clamps don't go up quite as high on the tires so they can work with some fender setups.

If you have larger fenders your best option would be the Thule EasyFold XT part # TH903202 which is a 2 bike rack. It uses a frame clamp design so your fenders won't interfere, folds up and is really easy to install and remove, and also has a ramp that pulls out to make loading and unloading bikes easier.
