Question:

Can I bolt the Stromberger carlson JET-30 to my pin box? I like the idea of having a neat and tidy way of keeping by trailer wiring stored outside of the cavity in the pin box and I'm thinking I can wrap the cord around those hooks.

The Stromberg Carlson Hitching Post Chain and 7-Way Plug Holder # JET-30 is a pretty simple device so as long as you make sure the screws aren't contacting anything inside your pin box you can definitely use it in this manner.

What I recommend using instead though is the Cord Keeper for 7-Way Power Cords on 5th Wheel Pin Boxes # MR92UR from MORryde. This uses magnets to install on the pin box so you don't have to worry about damaging anything and then it gives you brackets to wrap your cord around and a holder for the 7-Way plug.

The MORryde solution is much more pin box friendly and easier to use! Attached are some review videos for you to check out.
