I need an ST rated tire to replace my 8.75 R16.5 trailer tires

The 8.75 R16.5 size tires you're looking for are normally used for passenger-type vehicles which have more flex in the sidewall for better ride quality but trailer tires have a stiffer sidewall which helps to better stabilize heavier loads that trailers are normally subjected to.
For your application I recommend checking out the Provider ST225/75R15 Radial Trailer Tire # TR225LRE which has similar dimensions to your current tires and is a Load Range E (2,830 lbs at 80 psi) with an 81 mph speed rating.
To mount this to your trailer you also need 15" wheels. We have a wide variety of options that are compatible but for a basic design we have the Mini Mod with a Silver Powder Coat with either a 5 on 4-1/2" Bolt Pattern # AM20436 or with a 6 on 5-1/2" Bolt Pattern # AM20539.
