I have a 2021 Forest River 18TO that has a Driven camera system from the factory, is the Furrion Vision S system a plug and play installation?

Switching from a Driven camera to the Furrion Vision S Wireless RV Backup Camera System w/ Night Vision # FOS05TASF would not be a plug and play installation because you are switching from a system prepped for one system to a different system.
That being said, it is still a relatively easy installation to switch to the Furrion Vision S Wireless RV Backup Camera System w/ Night Vision # FOS05TASF. You would just need to cut off the current connector and splice in the Furrion connector and attach the new mounting plate which is included in the Furrion Vision S Wireless RV Backup Camera System w/ Night Vision # FOS05TASF.
