I have a 2021 Cadillac CT5 and I am looking for a trailer hitch for a bike rack. Is there any one that can be adapted to fit?

I have some alternative solutions for you but it looks like there hasn't been a fit released yet for the 2020 or the 2021 Cadillac CT5. For alternatives we have trunk mount bike racks and roof mount racks.
For a trunk mount rack I recommend the Yakima FullBack # Y02634 because it's easy to install, comes with bike and rack locks, plus it can fold up nicely for storage. You'll place the base pad 1-3/4" above your bumper and use the Hub Setting 1 for fitment. Attached is a video of me putting this on a 2020 Audi Q7 for you to get my thoughts on it.
For a roof mount option I recommend checking out our collection of SeaSucker racks because you don't have to purchase both the roof rack AND a bike rack - these options are one and the same:
