Would this work as a direct replacement for a suburban SW12DEL on my 2017 Keystone Montana 3721RL? Does this have automatic freeze protection?

Great question.
Yes you can use the Furrion RV Tankless Water Heater - Gas - Automatic Pilot - 60,000 BTU # FR93FR to replace your Suburban water heater.
It does not have an active freeze protection and will need to be winterized. It will perform best in temps above 39 degrees but will be ok down to 33 degress but not any colder and not for long periods.
If you need a new door you can get one here to fit the dimensions of your cutout.

Replacement Access Door for Furrion RV Tankless Water Heater - 18" x 18" # FR73FR.
If the anti-freeze is a must you can get the Fogatti RV Tankless Water Heater - Gas - Automatic Pilot - 41,800 Btu - White # LSB64FR. When the water temp in the lines reaches 35 degrees the unit will fire up and run until the temp of the water lines reach 90 degrees. Once the lines are heated the system will shut down autmatically.
Also if you get the Fogatti you will need a Camco RV Water Heater Temperature and Pressure Relief Valve - 1/2" Valve w/ 4" Probe # CAM10423.
