Question:
Going from a 10k max weight toyhauler for a 7600lb Airstream 27. Should I downgrade the 15K hitch or is it workable for a lighter trailer?

Unless the new trailer has a disproportionate amount of high tongue weight you would need to downgrade to a lower spring bar setup like the # BXW1000 that you referenced otherwise you'll have a very harsh ride quality.
