There are three trailer wiring harness options for a 2021 Honda Odyssey, the T-One Vehicle Wiring Harness part # 118781, the T-One Vehicle Wiring Harness part # 118753, and the Curt T-Connector Vehicle Wiring Harness part # C56382. The T-One Vehicle Wiring Harness part # 118781 is what I recommend because when compared to the T-One Vehicle Wiring Harness part # 118753 comes with additional fuses that correspond with your fuse box slot #10, slot #11, and slot #12. If you find that you have the fuses you need, I recommend the # 118753; if not, I recommend the # 118753.
When comparing the T-One Vehicle Wiring Harness to the Curt T-Connector Vehicle Wiring Harness, the T-One Vehicle Wiring Harness has a more secure attachment method which is the most common failure point. That said, these options are all plug and play so I am sure you will be happy with either. However, the Tekonsha harnesses are generally more reliable than the Curt connectors.
