Question:

I am looking for a Fireplace to fit into the entertainment area cabinet opening below the TV in my 2014 Tiffin 40AH. Opening dimensions are: 36 1/2inch Wide x 21 1/4High x 3to a max 8inch Deep

The Greystone 36" Electric Fireplace # 324-000081 is designed to fit into 34-1/4" wide x 16-1/2" tall x 5-1/2" deep openings, so it's a bit smaller than the opening, but it's going to be the closest possible fit for your opening. You'll likely need to add some strips around the edges of the cabinets to close the gap, but a larger fireplace would be too big for the space you've got.
