The recommended installation time for the etrailer Hitch item # e73ZR you were looking at is 1 hour. Now this is the time a professional installer should be able to get it done in but looking at the instructions, and specifically the part referencing the dual exhaust, I would say this is a pretty simple install. This receiver hitch bolts onto your Jeep Cherokee Latitude and will require no drilling or welding.
You will have to do the 2nd step in the installation directions twice because you have dual exhaust but other than that your exhaust system will not affect the hitch install. Without knowing your exact model year I can not make a recommendation on a wiring harness for your Jeep. Message me back with that information and I'll be glad to help you.
