Question:
I will typically be transporting 2 Pelican Catch 100 kayaks with my Kia Soul. Occasionally I will be needing to transport another SOT kayak. All kayaks will be 10 feet long. Is the Malone Ecolight with the V-style carriers my best bet and then changing these carriers for a Post-style carrier when I transport 3 kayaks?

I have another option for you, but since the Malone EcoLight Sport Trailer with V-Style Carriers for 2 Kayaks - 400 lbs # MAL43FR you were looking at has 58" long crossbars it will likely not be able to fit 3 J-style kayak carriers and kayaks.
To make sure you have enough room to carry your two Pelican Catch 100 Kayaks and the occasional SOT kayak I recommend the Malone MicroSport Trailer - 78" Crossbars - 800 lbs # MPG460G which includes 78" Crossbars so you will have plenty of room to fit your kayaks.
To be able to carry the kayaks I recommend going with 3 of the J style carriers # MPG117MD.
I included a video of the # MPG117MD for you to take a look at.
