I need to set this truck up with a complete 7 pole rv tow socket with brake control. What parts are needed?

I can definitely get some parts recommended to set your 2008 Chevy Colorado up with a brake controller.
First, you will need to start with a 4 Flat if you do not already have one. If you do not, the Tekonsha # 118301 will be a plug and play harness that will take no time to get installed. To get up to the 7 Way, it will need to piggyback off of the 4 Flat, so it is definitely needed.
Next will be the Universal Installation Kit for Trailer Brake Controllers # ETBC7. This will include the 7 Way plug, all wiring, brackets, and circuit breakers to get a controller up and running.
One of the most popular controllers at the moment is the Redarc Tow-Pro Elite # RED44FR. This has to do with how hidden and discreetly this installs. Looking at the dash of your 2008 Colorado, I would say this would install very nicely directly under the emergency flasher button. But that will be up to you, of course.
