I am looking for a hitch mount 1 rack for my Trek Verve+ 3 Lowstep. Which rack do you recommend?

I definitely recommend the RockyMounts HighNoon FC Solo Bike Rack for 1 Bike - 1-1/4" and 2" Hitches - Wheel Mount # RKY87RR. Since your Trek Verve+ 3 Lowstep has an alternate bike frame, the Thule T1 is great because it mounts on the wheels, so you don't have to purchase and additional bike frame adapter to attach it at the frame.
If you need a hitch for the RockyMounts HighNoon, I recommend the Curt Trailer Hitch Receiver - 2" # C25VR. The Curt Trailer Hitch is manufactured specifically to fit your 2020 Subaru Ascent. It will also give you 750 pounds of tongue weight, which is plenty of weight to mount a single bike/rack combination and any other accessories you choose to purchase in the future.
