Is the rating of the Ericson #09160 of #1500 for use with a single strap or with both? I have a #1800 UTV

The 1,500 pound working load limit (WLL) for the Erickson ATV E-Track Tie-Down Kit # EM09160 referenced in your question does refer to the combined capacity of both straps and chocks. Since your UTV weighs close to 2,000 pounds I recommend using two sets to secure all four of its wheels to the trailer.
