Will the Bolt hitch lock Item # BL7018448 work on my Ram 2021 2500 limited that comes with the 2 1/2inch receiver? My keyless fob looks different then the pictured and it looks like the fitment chart only goes up to 2018. If I should use a different model please let me know which.

The Bolt # BL7018448 Receiver Lock does work with your 2021 RAM 2500 with 2-1/2" receiver and with a 5/8" hitch pin hole size. This will deter theft of your hitch receiver and ball mount.
You might also be interested in the Bolt # BL7025286 coupler pin lock. This will deter theft of your trailer when you are not hitched to it.
Each of these items can be set to work with our RAM ignition key.
