I have a 2019 Keystone Montana High Country 331RL camper. Dont need tires right now, but will need some soon. How important is matching the tire rim width to the wheel rim width? Can a tire with a 6.5 inch rim width be used safely on a wheel with a 6.0 inch rim width?

Yes, you can safely use a tire with a 6-1/2" bead width with a wheel with a 6" rim width. Any given wheel width can have several valid tire widths that can operate on it, with the narrowest of those choices being best. From my research the factory specs for your High Country call for ST235/80R/16F tires. Tires of that sizing can fit rim widths of 6", 6-1/2", 7", and 7-1/2". While all four sizes can safely operate with that tire, the 6" or 6-1/2”" are best. Personally, I would go with the same size that the factory originally equipped it with. An added benefit of using the factory recommended tire sizing is that you need not be concerned about changing clearances at the fender tops or back walls.
If you decide to go with the ST235/80R/16F tires I would recommend the Westlake # WE76FR with load range “G” and speed rating “L”. These are excellent 14-ply radial tires. I have attached a link to this product and a video review. Should you prefer a different tire size let me know.
