Probably a stupid question but how exactly does this vent? Do I need to hook it up to wiring and a light switch?

The Mushroom Vent # 37202-29125 you referenced is a replacement vent for the sewer and holding tanks. The mushroom vent mounts on the roof of your RV or camper to allow odors and gases to escape without entering the living quarters. The mushroom vent does not have a fan built in so no wiring or switches are needed.
An option for a roof sewer vent that does have a fan is the Ultra-Fab Solar-Powered Plumbing Vent # UF53-945001. This upgrades your existing roof vent, or will add a roof vent with a solar powered fan. Since it's solar there is no wiring or splicing involved. Just keep in mind, since it is solar it will not work at night, since it doesn't have a way to store power.
If you are looking for a roof vent with an electric fan, the Ventline Vanair Trailer Roof Vent w/ 12V Fan # VP-543SP is a low profile vent with a 12V fan. It's pretty quiet and it produces 100 CFM at only 1 1/2 amps, so it doesn't require a lot of power. To get it installed it will require an existing 6 1/4" hole, or a new one to be cut. It's great for bathrooms, or just about anywhere you want a roof mounted vent.
Hardware does come with all the vents, but you will need a few other things to complete the install. For the electric vent fan you'll need ring terminals # DW05702-1 so you can make the ground connection. Butt connectors to make the electrical connections # DW05744-5.
All of the vents are going to need to be sealed, you can use The Roof Vent Installation Kit # 344270KITW, it comes with butyl tape and self leveling sealant to make sure there is no leaks.

Robert: I am looking for a vent that could fit easily on the top of a motorcycle trailer. This trailer is fiberglass and I plan to haul my gasoline and generator for camping. Could you tell me if the mushroom vent would work or is there another one you carry that would be a better use for this trailer. I have considered installing a small roof vent to the top and a free flow air vent in the rear, but I am considered about keeping things dry.
