Can I purchase 2 of the 6inch x 2inch replacement wheels?

Yes I recommend Removable, 6" Dual Poly Caster Assembly for etrailer or Ram Jacks - 1,500 lbs
Item # JWK-6DP. I have checked to make sure these will work with the MaxTow jack and they do fit. This kit comes with a new sleeve. The sleeve itself does not work with your jack so you need to reuse the two sleeves your jack currently has on it.
