I have a 2017 F-250 6.7L diesel. Hitch says 1500lb tongue weight. Can I increase that with a new hitch?

Yes. For your 2017 Ford F-250 6.7L diesel, I recommend the Curt Trailer Hitch Receiver - Custom Fit - Class V Commercial Duty - 2-1/2" # C15802 which is rated for tongue weights up to 2,700 lbs. This won't increase the tongue weight range of your truck determined by the manufacturer which is set for 10% of the towing capacity. The hitch is rated independently so the hitch receiver can handle up to that 2,700 lb capacity.
