I am looking for a trailer hitch for a Mazda CX-5, 2019. What models # will work for the tow bar? And will the curt 56011 wiring harnesses work?

The trailer hitch I recommend for a 2019 Mazda CX-5 (Except Diesel) is the Draw-Tite Max-Frame Trailer Hitch Receiver part # 76138 which is a direct bolt-on fit with no cutting or drilling required. The Draw-Tite hitch has what is known as a concealed cross tube which essentially means you get the best finished install look.
In order to tow a trailer you'll also need a trailer wiring harness, the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector part # 118746 is our most reliable option. Don't forget the etrailer Ball Mount Kit part # 989899.
