Question:
Can you install these on an easy lube axle to convert it to oil bath ?

Yes, as long as you are installing this on a 7,000 lb axle, you can use these to convert your EZ Lube grease hubs to oil bath hubs. If you aren't sure of your axle size, there should be a tag on the axle with the information or you can just match up your bearing numbers. This hub uses bearings 25580 and 14125.
The spindle doesn't really have anything to do with switching to oil from grease. The important factors are the seal and dust cap on the hub. An oil seal is different from a grease seal because it has rubber on the inner and outer perimeters and the dust cap is threaded to create a better seal than press in metal caps.
