I am happy to help you with the wiring harness that you need but the the wiring harness does not come with the Draw-Tite Trailer Hitch Receiver part # 36501.
If you have a 2007 Ford Escape that did not come with a tow package, then you need part # 118426 for the wiring. The Tekonsha wiring harness will give you a 4-way at the rear of the Ford Escape that plugs in to the trailer wiring to illuminate the trailer lights. This wiring harness will plug in behind the tail lights of the Ford. I have attached an installation video for your reference.
If your 2007 Ford Escape has a factory tow package, the 4-way wiring can be replace with part # 40455 which plugs into a OEM plug under the bumper. I have attached an installation video of this as well. Both of these options give you a 4-way connector so please let me know if you are trying to install a 7-way plug and I can make additional recommendations.
