The Curt Adjustable Width Trailer Hitch Receiver for RVs part # 13703 does have 4-7/8" tall brackets like you mention. Since I cannot recommend to cut down the brackets, I recommend to use an adjustable hitch that attaches to the bottom of the frame depending on the width of your trailer.
If your trailer is 18"-51" wide, I recommend Curt Adjustable Trailer Hitch Receiver part # C13701 which is designed for I-beam trailers and attaches directly to the bottom of the frame instead of inside of the channel. I have attached the installation instructions for your reference.
If your trailer is wider than 51" I recommend Draw-Tite Multi-Fit Motor Home Trailer Hitch part # 82201 which also attaches to the bottom of the frame and can fit trailers from 47" - 71" wide.
