The best trailer hitch for a 2020 Ford Escape is the Curt Trailer Hitch Receiver part # C23FR. The Curt Hitch is an excellent option because it has a hidden cross-tube design which means you won't see the bulky cross tube hanging below the rear bumper which makes for the cleanest look. Furthermore, the installation process will be easier than other options taking only 20-40 minutes on average.
If you will be towing then you'll also need a trailer wiring harness the T-One Vehicle Wiring Harness part # C75CR.
