I have a 2015 Volkswagen Golf R Launch Edition. From my research it looks like this should fit the car. There is the ecohitch option that has both 1.25 and 2inch receiver options. Looks like curt only has 1.25. Is there any big difference between the ecohitch and the curt, aside from the ecohitch having a 2inch option? I want a 1.25inch and it looks like curt is more than $200 cheaper.

I'll start off by addressing your first question; yes, the Curt # C11564 is a confirmed fit on your 2015 VW Golf type R. When it comes to choosing between the EcoHitch # 306-X7333 and the Curt, you'll find that the EcoHitch is just a little bit more hidden than the Draw-Tite hitch-but they're both technically concealed cross-tubes; the 2" EcoHitch # 306-X7332 will also be more hidden than the Draw-Tite since both EcoHitches are installed the same way.
I generally feel like choosing a 2" receiver, like the one available on the EcoHitch # 306-X7332, is the best decision when available because in the long run it provides you with much better choices when it comes to hitch mounted accessories. It also has a 300-lb tongue weight capacity compared to the 200 of the other two.
If you plan on using your hitch for a bike carrier and may have more than 1 other person with you, it's probably going to be better to go with the EcoHitch # 306-X7332. While there is a rather significant difference in prices, this is the clear-cut advantage of going with the EcoHitch Class II 2" receiver # 306-X7332. With that being said, you may be able to get away with going with the Class I Curt # C11564, but it will depend on your intended use. You can only carry 1 or 2 bikes on the class I
If you're going to be towing with your hitch, I recommend going with the EcoHitch, since it is a Class II hitch and will be better suited for towing. You'll need to add a trailer wiring connector like the Curt # C59236, as well as a ball mount and hitch ball like the ones included in the etrailer Ball Mount Kit # 989900. This would give you a complete towing package that will cover a variety of trailer setups that you might encounter.
