Can i use this hitch on my 2018 GMC Sierra 1500 Crew Cab which has a 5'8" bed?

I do have a couple of great options for you, however the Demco Hijacker Autoslide 5th Wheel Hitch # DM8550034 that you referenced features 14" of front to back travel on the slider, which almost certainly isn't enough to provide cab clearance during sharp turns on your 2018 GMC Sierra 1500 that has the 5-1/2 foot bed.
If you like the idea of an automatic sliding hitch, the much better option will be with the Demco Hijacker Autoslide # DM8550041, which actually provides 22-1/2" of front to back travel with its slider. This is the most travel of any sliding hitch we have available. For the under-bed rail kit that will be used to mount the hitch to the bed you will need part # DM8551008. This is a really nice system that allows for a completely clean truck bed when the hitch is removed.
The Hijacker itself has a towing capacity of 13,000 pounds and features Demco's signature wraparound single-piece jaw with 3/4" locking bar to create an extremely secure connection with the trailer and a smooth, quiet ride during travel.
If you need a bit more capacity your only other option with a short bed like this is to go with a fixed hitch, such as the excellent Reese M5 # RP30928 with Base Rail Kit # RP50064-58, and install a rotating pin box like the Reese Sidewinder to the trailer. This type of pin box will shift the pivot point 22" back and away from the truck to provide the necessary cab clearance. You'll also need the Wedge Kit # RP44FR to prevent the king ping from pivoting in the jaws of the hitch.
In order to choose the right Sidewinder you will need to know the factory pin box model on your trailer. If you can tell me this I will be happy to recommend the correct unit. I have attached a great article on this subject below that you can also check out.
