Essentially, there are two types of hitch options available for your Highlander. A hitch that is mostly concealed behind the rear bumper (except for the receiver tube) like the Curt # C13394 or the # 306-X7250 and the etrailer hitch # e98844 that is just about completely exposed.

If you don't particularly care that the hitch is completely visible, the # e98844 would be a fine choice, and if you prefer the hitch be mainly concealed behind the vehicle's bumper go for the # C13394. For a trailer wiring harness, I'd go with # 118449. I've linked to installation videos for all three of these items.

The only other thing you might need is a ball mount/trailer ball kit like # 989900.
