The best way to tow a 2019 Mini Cooper convertible is with a tow dolly like the Roadmaster part # RM-2050-1 as this is overall the easiest to set up method and also the only method that fits all versions of your 2019 Mini Cooper. Flat towing with all four wheels on the ground ends up costing about the same, has a much longer install time, and is a harder setup to transfer to future vehicles which is why I prefer the tow dolly method for your vehicle (and others).
For lower ground clearance vehicles like yours though we recommend the Demco Dolly # DM9713046 which has lower ramps.

I also have a 2019 Mini Cooper S Convertible. Demco advised their dolly wont work. Any suggestions?
