How do I determine the rise I need

To determine the rise (or drop for that matter) you need in a ball mount like the # AMSCV-4 you referenced you need to take a couple of measurements.
Park both your trailer and tow vehicle on level ground. Measure from the ground to the inner top of the trailer hitch's receiver opening on the vehicle, as well as from the ground to the bottom of the trailer's coupler. The difference of these two is the rise or drop you need. If the trailer's coupler is higher than the receiver opening you need a ball mount with a rise. If the receiver on the vehicle is higher then you need a drop.
Once you've taken the measurement let me know the rise you need and I'll recommend a specific ball mount for you.
Another option is to go with an adjustable ball mount like the Curt, part # C45900. This also gives you the ability to tow multiple trailers without needing different ball mounts as well.
