the Hopkins plug has 6 single prong connectors and a center connector with a slight conical end. The Bargman plug has 6 double prong connectors and a round center connector. are they functionally interchangeable? simply two methods of making electrical contact, or what?

Yes, the Hopkins 7-Way RV Style Connector part # H20046 and the Bargman 7-Way RV Style Connector part # WG54006-046 will both fit the same 7-way blade style RV trailer connector like the Replacement 7-Way RV-Style Trailer Connector part # A10-7072VP. The design of the the center pin is slightly different as your mentioned but this will have no effect whatsoever on it's compatibility. Therefore, so long as the 7-way has blade style pins which is standard for RV's then they can be swapped out for one another. You do not need to match the brand of trailer connector for the vehicle and trailer as they are pretty much universal.
