2012 Subaru Impreza WRX. Would there be an issue towing my 400 lb bike with one of the hitch carriers? 2inch receiver to a platform with the bike on it. Only 3 hours all highway no bumps.

The EcoHitch Stealth Trailer Hitch Receiver - Custom Fit - 2" # 306-X7261 you asked from for your 2012 Subaru Impreza is not compatible with your 400 lb motorcycle with a carrier. This hitch is only rated for a max capacity of 300 lbs. That greatly surpasses the hitch weight capacity and doesn't even include the weight of the motorcycle carrier itself.
Your best option would be to tow a small trailer like the Detail K2 Mighty Multi A-Frame Utility Trailer # K2MMT5X7. For this you will also need the Curt T-Connector Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # C56111 and ball mount # C45534. Then you can use the motorcycle chock # TWSPWM and straps # EM05729 to secure your bike. The tongue weight from a light trailer like this will not overload your vehicle.
