The first step you are going to take if you have not already done so is release the latching mechanism which could be either a thumb latch or hand knob. The thumb latch flips up and the hand knob turns (righty tighty, lefty loosey). You may need to adjust the jack's height or bounce up and down on the bumper a few times to loosen the mechanism.
If you still can't get the trailer uncoupled then you may want to try and spray some lube inside the coupler on the hitch ball and tap the top of the coupler lightly with a hammer. If still nothing then I would make sure both the truck and trailer are on level ground as there could be a binding issue.
If all else fails you may need to take it to a professional. Once uncoupled I would verify that the hitch ball was the correct size for the coupler and the latching mechanism is working properly. If you need replacements just let me know.
