My trailer tongue is 3 inches wide. Dont the mounting holes need to be more than 3 inches wide so the mounting hardware can fit around it??

Yes, the mounting holes on a roller bunk assembly bracket would need to be spaced apart farther than 3" in order to fit a 3" wide frame. Instead of using the CE Smith Spool Roller Assembly part # CE10451G, I recommend using a combination of the brackets part # MBSPB, roller part # YR510Y-5, shaft/nuts part # CE10722A, and u-bolts part # CE15252A. Roller assemblies can be installed on trailers in a variety of different ways but in order to attach them directly atop a 3" wide frame rail like I believe you are trying to, I suggest using the universal brackets mentioned above.
