Just checking before buying. Just NV 2 with 1.25” receiver will hold/handle two ebike weighing in around 55 lbs each?

The Kuat NV 2.0 Base 2-Bike Platform Rack for 1-1/4 Inch Hitches # BA12B that you referenced is indeed capable of securing 2 bikes of up to 60 pounds each. As far as your 55 pound e-bikes, the rack itself is more than up to the task. The only thing you will want to note is the tongue weight capacity of the trailer hitch and the vehicle it is installed on. As long as it can support the combined weight of your two 55 pound bikes, along with the weight of the carrier itself (49 pounds), you will have no issue.
This is a really nice 2-bike, platform-style carrier that will secure your bikes by the wheels with no frame contact. The rack can tilt down with the bikes still loaded for easy rear cargo access and the hand-tightening cam system allows for a tool-free installation in the hitch. It works with wheel sizes of 25 to 29 inches with a maximum tire width of 4.8 inches. A bike and hitch lock are also included to help protect your investments.
