Question:
Can I cut the wires coming from the trailer and cap and tape each one separately? Or will I have to disconnect the wiring from the battery?

We have scissor jacks like the Ultra Fab Jacks part # UF48-979002 that have 24 inches of lift and a 6,500 lb capacity.
When you remove your old jacks and wiring basically you'll just have to start by removing the wiring near the jacks and switch and work your way back to where it connects to your RV's power source and then take it all out. Or if you want to leave the wiring in place you can disconnect it from the battery and then remove only what's easily accessible.
