I see this CAM57001 but also have seen a part number 57005. What is the difference between the two parts?

The Camco Pop-A-Plate Disposable Plate Dispenser # CAM57001 and the 57005 part number that you mentioned are the exact same product. The two numbers are simply used for internal purposes at Camco and do not indicate any difference between the two.
This is a nice dispenser that will mount under your cabinet or shelf and can hold up to (100) 9 inch paper or plastic plates. I have attached a short video demonstration on this product that you can also check out.
